Southeastern convenience retailer Minuteman Food Mart has named Ed Bitondo as its new vice president of convenience store operations, the company announced on LinkedIn this week.
In his role, Bitondo will lead the “strategic and operational direction” for Minutman’s retail division, which includes more than 60 convenience stores across the Carolinas. He will report directly to Wesley Campbell, the company’s president of retail operations.
Bitondo joins Minuteman after spending the past decade as director of operations for BP-owned Thorntons, which operates more than 200 convenience stores across six Midwestern states. He’s also held various operations roles with CVS, Walmart and Best Buy.
Bitondo said in the LinkedIn announcement that he was drawn to Minuteman’s “innovation, customer-centric approach and focus on creating an inclusive and collaborative work culture.”

Minuteman is owned by Campbell Oil Company, a family-owned bulk oil distributor based in North Carolina. Many locations include the company’s prepared foodservice program, which features made-to-order and grab-and-go meals such as fried chicken, ribs, burgers, biscuit sandwiches, hot dogs, pizza and mac and cheese bowls. The retailer has used self-checkout kiosks in some of its stores since 2023.
